Difficult is definitely something you should be prepared for. You are doing well enough for your professors to make sure that you are getting your work done.
The fact that easy explanations can be simple can also complicate things. If the subject of your essay seems easy, that's great for you, but you must remember that if your topic is too simple, you are going to have to think about and explain your thesis.
Some common examples of simple topics for you to write about would be football statistics, the history of the Texas Longhorns, and what baseball is to you. There are certainly other ideas that you can come up with as well, but these are some of the more common examples.
As long as you stick to a simple way of writing that is also easy to understand, you should be able to come up with an interesting topic for your essay. But, you should also be ready to re-read it several times to make sure that it is something that you wrote.
In conclusion, if you have a great idea for a topic, and it isn't that complicated to write, but your professors are forcing you to read and re-read your topic multiple times before you can even come up with a decent explanation for it, then maybe you are better off leaving it alone. One you are finished with it, you can pick up the topic again, rewrite it, and then move on to your next subject. Perhaps you will come up with a great topic for your next essay.
